Ingredients
6 cups Peaches, Fresh, diced
3 cups Tomatoes, Roma, diced
1 cup Red Bell Pepper, diced
3-4 Jalapenos, minced
2 cups Mango, Fresh, diced
1 cup Onion, Red, finely diced
1 cup Cilantro, chopped
¼ cup Lime Juice
1 tablespoon Salt
1 teaspoon Black Pepper
Preparation
1. In a large bowl, combine all ingredients and mix well.
2. Serve immediately or cover and chill 2 hours to overnight for a better blend of flavors.
Notes
This salsa works with grilled eggplant, asparagus, or corn. It can also be used as a marinade for vegetables, tofu, seitan, or tempeh that you want to grill.
