Rebellyous Chick’n and Waffles

Ingredients
4 Rebellyous Chick’n Patties, cooked according to package
4 Vegan Waffles (recipe below)
8 Ounces Vegan Gravy (recipe below)
4 Ounces Maple Syrup
Preparation
1. Cut the waffle in quarters and place one quarter in the center of the plate.
2. Place the patty onto the center of the waffle.
3. Ladle the gravy across the patty allowing it to spill onto the plate.
4. Place the 2nd quarter of waffle leaning against the bottom waffle and patty.
5. Drizzle the maple syrup around the plate.
6. Serve hot.

Ingredients
1 ½ Cups Non-dairy milk
¼ Cup JUST Eggs Liquid
1 Tablespoon Maple Syrup
½ Teaspoon Vanilla Extract
1/3 Cup Vegetable oil
2 Teaspoons Apple Cider Vinegar
2 Cups Flour All Purpose
1 Tablespoon Baking Powder
½ Teaspoon Salt
Preparation
1. Mix together all liquid ingredients (non-dairy milk, JUST eggs, syrup, vanilla, oil and vinegar).
2. Combine all dry ingredients in a mixing bowl (flour, baking powder and salt).
3. Whisk the liquid ingredients into the dry ingredients until fully incorporated.
4. Preheat waffle iron on high heat.
5. Portion 7oz of batter into the waffle iron and close the iron.
6. Cook for 2.5 to 3 minutes or until the waffle is lightly browned and crisp.
7. Remove from waffle iron, reserve on sheet pan, and repeat with remaining batter.

Ingredients
¼ Cups Liquid Butter Alternative
½ Cup Yellow Onion, diced
¼ Cup Flour, All purpose
3 Cups Vegetable Broth, low sodium
2 Tablespoon Soy Sauce
1 Teaspoon Vegan Poultry Seasoning
¼ Teaspoon Salt
¼ teaspoon Pepper
2 ounces Tofurky Hickory Deli Slices
Preparation
1. Preheat sauce pan over medium heat.
2. Add liquid butter and allow to come up to temperature.
3. Dice the Tofurky Slices into small pieces.
4. Add the onion and diced Tofurky to the vegan butter and sauté for 2 to 3 minutes or until the onions turn translucent.
5. Add flour to the pan and continue to sauté for 1 to 2 minutes to toast the flour and create a rue.
6. Add the vegetable broth and whisk to fully incorporate the flour.
7. Reduce the heat to low, add the soy sauce, poultry seasoning, salt and pepper.
8. Allow the sauce to simmer for 5 to 7 minutes or until thickened to coat the back of the spoon.
9. Hold warm for service
