Italian Meatball Subs
This recipe was developed by the chefs at UT Austin during one of our product trainings.
Yields: 8 subs
Ingredients
Sauce
1/3 cup olive oil
8 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
2-28 ounce cans crushed tomatoes with basil
1 1/2 teaspoons salt
1/2 teaspoon granulated sugar
1 1/2 teaspoons Italian seasoning
1/2 cup fresh basil leaves, chopped
For service
2 packages Jack & Annie’s meatballs
* sub rolls, cut in half
8 ounces NUMU cheese, shredded
Fresh basil, torn
Preparation
- Prepare the meatballs according to package instructions.
- Prepare the sauce – In a large saucepan, heat olive oil over medium heat.
- Add minced garlic and crushed red pepper flakes, sauté until fragrant, about 1-2 minutes.
- Add the crushed tomatoes, salt, sugar and Italian seasoning.
- Bring the sauce to a simmer and cook for 20-30 minutes, stirring occasionally.
- Stir in chopped fresh basil.
- Assemble the subs – Preheat the broiler.
- Place the cooked meatballs into the tomato sauce and simmer for an additional 5 minutes to allow the flavors to meld.
- Place the sub rolls on a baking sheet. Spoon the meatballs and sauce into each roll.
- Top each sub with shredded NUMU cheese.
- Broil the subs until the cheese is melted and bubbly.
- Garnish with fresh torn basil and serve immediately.
