Adda Veggie Kofta
This recipe was developed by the chefs at Kansas State University during one of our product trainings.
Yields: 12-2 ounce patties
Ingredients
Baharat seasoning
2 tablespoons ground black pepper
2 tablespoons Spanish paprika
1 1/2 tablespoons ground cumin
1 tablespoon ground cinnamon
1 tablespoon cloves
1 tablespoon coriander
2 teaspoons ground nutmeg
1/2 teaspoon ground cardamom
Kofta
0.265 ounces Adda Veggie Original Blend
1 cup cold water
1/2 teaspoon garlic, minced
1/4 cup yellow onion, minced
2 tablespoons Baharat Seasoning,
1/2 lemon, juiced
1 tablespoon JUST egg liquid
1/2 tablespoon salt
1/2 teaspoon parsley, fresh, chiffonade
1/2 teaspoon mint, fresh, chiffonade
1 tablespoon oil
Preparation
- In a small bowl, add 1 cup cold water to Adda Veggie Original Blend. Mix thoroughly and let stand for 5 minutes.
- Add remaining ingredients and mix thoroughly. The mixture should be tacky and form balls/patties easily, with consistency like a raw cookie dough. Form 2-ounce patties from the mixture.
- Heat a flat-bottom skillet with oil. Once hot, add 3-4 patties to the pan to cook. Cook about 3-4 minutes, until golden brown. Turn and repeat the process.
- Serve warm with red onion and pita.
