Loaded quiche bites
This recipe was developed by the chefs at Kansas State University during one of our product trainings.
Yields: 8 quiches
Ingredients
1/2 cup Adda Veggie Breakfast Sausage blend, prepared
3/4 cup roasted peppers & onions, prepared
1 cup JUST egg liquid
1/2 cup NUMU cheese, shredded
1-10 inch sheet phyllo dough
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon parsley, fresh, chopped
Preparation
- Follow directions for Adda Veggie breakfast sausage, using roasted onion & bell peppers as vegetable add-in. Once the seasoned mixture is created, form into 1/4 inch balls and place on baking sheet. Bake in conventional oven at 350 degrees for 6-8 minutes, until slightly browned with crisp outside texture.
- Take frozen, pre-sheeted phyllo dough product and cut into 2-inch squares. Layer into pre-oiled mini muffin tin. par-bake phyllo crust at 350 degrees for about 6 minutes. Remove and set aside.
- In a small bowl, combine JUST egg, salt, pepper and parsley.
- Into each par-baked phyllo dough, add about 1 tablespoon JUST egg mixture, 1 teaspoon cheese, and 1 crumbled Adda Veggie breakfast sausage. Bake quiche at 350 degrees for 9-12 minutes, until egg mixture is solid and heated through. Remove from dish and serve.
