Ingredients

1 cup rolled oats, dry
1/2 cup raisins
1/3 cup vegan chocolate chips
1/4 cup pumpkin seeds, raw, shelled
1/4 cup sunflower seeds, raw
3/4 teaspoon Kosher salt
1/2 teaspoon baking soda
1/2 cup sunflower butter, unsalted
3 tablespoons water, room temperature
2 teaspoons lemon juice
1 teaspoon vanilla extract

Preparation

  1. In the bowl of a stand mixer, combine oats, raisins, chocolate chips, pumpkin seeds, sunflower seeds, salt and baking soda. Mix thoroughly with a paddle attachment.
  2. In a bowl, combine sunflower butter, water, lemon juice and vanilla extract.
  3. Preheat oven to 350 degrees Fahrenheit. Scoop dough with a #24 red scoop onto parchment lined sheet pan and flatten slightly. Bake for 15 minutes until golden brown, rotating halfway through baking time.
