Biscuits & gravy with JUST egg omelette
This recipe was developed by chefs at the University of Wisconsin Madison during one of our product trainings.

Ingredients
8 Impossible sausage patties
0.3 ounces fresh thyme
2 ounces canola oil
1 teaspoon fresh sage
6 ounces all-purpose flour
6 ounces vegan butter
1 garlic clove, minced
2 teaspoons rubbed sage
1 teaspoon black pepper
1 teaspoon Kosher salt
4.5 ounces vegan chicken base
1/2 teaspoon cayenne pepper
1 cup water
7 cups non-dairy milk, unsweetened
For service
8 JUST egg folded
8 pre-made vegan biscuits
1/4 cup fresh parsley, chopped
Preparation
- Fry sausage patties in canola oil in a non-stick skillet until brown. Chop into chunks then set aside.
- In a large pot, melt vegan butter and add garlic. Cook for 1 minute. Add flour to make a rue. Cook on low heat for 5 minutes.
- Add dry spices then add non-dairy milk using a whisk. Incorporate slowly.
- Add vegan chicken base and water. Cook for 5 minutes.
- Cook JUST egg omelette according to package instructions.
- Slice open biscuit, top with JUST egg omelette and 3 ounces of gravy. Garnish with parsley.
