Chocolate Overnight Oats

Chocolate overnight oats with strawberries and cream

This recipe was developed by the chefs at Kansas State University during one of our product trainings.

Yields: 2 cups

Ingredients

3/4 cup Uproot chocolate pea-milk
1 cup oats, old fashioned rolled oats
1/2 cup Uproot soymilk
3/4 cup coconut oil
2 tablespoons powdered sugar
1 teaspoon vanilla extract
4 strawberries, sliced

Preparation

  1. Add oats into container. Pour chocolate pea milk over oats to cover. Let soak overnight or up to 36 hours.
  2. Warm coconut oil to just above room temperature (liquid state). Combine with soy milk, vanilla, and powdered sugar. Whip to combine and thicken.
  3. Place overnight oats into serving dish and top with cream and berries.
