Chorizo and Cheese Frittata

This recipe was developed by the chefs at Southern Arizona VHA during one of our product trainings.

Serving Size: 1 frittata

Ingredients

10 ounces vegan cheese, NUMU
8 cups JUST egg liquid
10 ounces Hungry Planet ground chorizo or Abbot’s Butcher chorizo
Salt and pepper to taste

Preparation

  1. Preheat oven to 350 degrees.
  2. Pour eggs into multi baker pan until it almost reaches the top. Sprinkle 1 ounce of cheese and 1 ounce of chorizo into each. Season with salt and pepper to taste.
  3. Bake at 350 degrees for about 9 minutes until set.
