Chorizo and Cheese Frittata
This recipe was developed by the chefs at Southern Arizona VHA during one of our product trainings.
Yields: 20 servings
Serving Size: 1 frittata
Ingredients
10 ounces vegan cheese, NUMU
8 cups JUST egg liquid
10 ounces Hungry Planet ground chorizo or Abbot’s Butcher chorizo
Salt and pepper to taste
Preparation
- Preheat oven to 350 degrees.
- Pour eggs into multi baker pan until it almost reaches the top. Sprinkle 1 ounce of cheese and 1 ounce of chorizo into each. Season with salt and pepper to taste.
- Bake at 350 degrees for about 9 minutes until set.
