Croque monsieur
This recipe was developed by Chef Mike at the University of Wisconsin Madison during one of our product trainings.

Ingredients
Cheese sauce
3/4 cup non-dairy milk
3 tablespoons nutritional yeast
2 tablespoons tapioca
1/2 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1 tablespoon white wine
1/4 teaspoon dijon mustard
pinch black pepper
1 cup NUMU mozzarella
Sandwich
2 slices sour dough bread
3 tomato slices
1 leaf lettuce
3 slices Tofurky hickory smoked ham
1 teaspoon olive oil
2 ounces cheese sauce
Preparation
- Make the cheese sauce – Mix together all ingredients in a small sauce pan. Heat until melted and thickened.
- Make the sandwich – Heat oil on flat top. Brown the sour dough bread.
- Place the Tofurky, tomato and lettuce on bread. Pour cheese sauce on top of the sandwich. Serve hot.
