Hawaiian fried rice

This recipe was developed by Chef Eric Benedict at the University of Wisconsin Madison during one of our product trainings.

Serving size: 10 ounces

Ingredients

2 ounces sesame oil
8 ounces OmniPork Luncheon (vegan spam), cooked and crumbled
6 ounces pineapple, diced
1 tablespoon garlic, minced
1 tablespoon ginger puree
1 ounce jalapeno, diced
1 ounce scallion, sliced
1 tablespoon cilantro, chopped
2 ounces carrot, shredded
2 ounces JUST egg folded, diced
20 ounces cooked rice, chilled
3 tablespoons soy sauce

Preparation

  1. Heat oil over high heat in a sauté pan. Add garlic and ginger. Cook until aromatic.
  2. Add jalapeno, vegan spam, scallion, carrot, JUST egg folded, and pineapple. Continue to cook and stir.
  3. Fold in rice and soy sauce. Adjust seasoning if necessary.
  4. Divide into four equal servings and garnish with the cilantro. Serve hot.
