Italian Meatball Subs

This recipe was developed by the chefs at UT Austin during one of our product trainings.

Yields: 8 subs

Ingredients

Sauce
1/3 cup olive oil
8 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
2-28 ounce cans crushed tomatoes with basil
1 1/2 teaspoons salt
1/2 teaspoon granulated sugar
1 1/2 teaspoons Italian seasoning
1/2 cup fresh basil leaves, chopped

For service
2 packages Jack & Annie’s meatballs
* sub rolls, cut in half
8 ounces NUMU cheese, shredded
Fresh basil, torn

Preparation

  1. Prepare the meatballs according to package instructions.
  2. Prepare the sauce – In a large saucepan, heat olive oil over medium heat.
  3. Add minced garlic and crushed red pepper flakes, sauté until fragrant, about 1-2 minutes.
  4. Add the crushed tomatoes, salt, sugar and Italian seasoning.
  5. Bring the sauce to a simmer and cook for 20-30 minutes, stirring occasionally.
  6. Stir in chopped fresh basil.
  7. Assemble the subs – Preheat the broiler.
  8. Place the cooked meatballs into the tomato sauce and simmer for an additional 5 minutes to allow the flavors to meld.
  9. Place the sub rolls on a baking sheet. Spoon the meatballs and sauce into each roll.
  10. Top each sub with shredded NUMU cheese.
  11. Broil the subs until the cheese is melted and bubbly.
  12. Garnish with fresh torn basil and serve immediately.
