Red Bean Fritter Waffle

Ingredients
3 1/2 cups kidney beans, canned, drained, not rinsed
1 cup yellow onions, small dice
3 tablespoons garlic cloves, peeled, minced
1 1/2 cups zucchini, grated, wring out excess water
1/2 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon Kosher salt
1 teaspoon black pepper, table grind
2 1/2 teaspoon baking powder
1 cup canola oil
3/4 cup salsa, premade
3/4 cup green onions, sliced thinly on bias
Preparation
- In a food processor, add in beans, onions and garlic. Pulse the mixture 5-7 times until well combined but not a paste. Transfer to a mixing bowl.
- Fold in the zucchini, flour, cornstarch, salt, pepper, baking powder and oil. Spray waffle maker with non-stick spray and portion 2 ounces or 1/4 cup of batter in waffle maker. Cook for 3-4 minutes until golden brown and crispy. Serve 2, 2 ounce waffles for a serving. Alternatively, a 4 ounce waffle can be made if a larger size is desired.
- Garnish with 1 tablespoon of salsa and 1 tablespoon of green onion.
Notes
For a Belgian waffle maker, use 8 ounces or 1 cup. If using this portion size recipe yield will no longer be 12.
