Smoky BBQ Jalapeno Loaf
This recipe was developed by the chefs at Oklahoma State University during one of our product trainings.
Yields: 1 loaf
Ingredients
2.2 pounds Hungry Planet ground pork
1 cup NUMU cheese
1 cup jalapenos, diced
3/4 cup red onion, diced
2 tablespoons garlic, minced
2 teaspoons smoked paprika, ground
2 teaspoons chipotle powder
2 teaspoons salt
1 teaspoon black pepper
1/2 cup BBQ sauce, prepared, divided
Preparation
- Mix all ingredients together in a large bowl except BBQ sauce. Add just 1/4 cup BBQ sauce to mixture. Reserve the other 1/4 cup for later.
- Shape mixture into a loaf and wrap tightly in cheese cloth for smoking. Tie using the trussing method. Smoke at 250 for 1.5 hours.
- Once removed from smoker, unwrap and brush with remaining 1/4 cup BBQ sauce. Place in the oven at 425 for 15 minutes. BBQ sauce will caramelize. Final temperature should be 165.
