Smoky BBQ Tri-tip Tofu Hoagie

Ingredients
1 cup Sauce, Barbeque
1/4 cup Oil, Canola
1/4 cup Soy Sauce, regular
1 tbsp Paprika, Smoked, ground
2 tsp Chili Powder
2 tsp Garlic, powder
2 tsp Onion, powder
2 tsp Pepper, Black, ground
9 2/3 cups Tofu, Extra Firm, drained, pressed, cubed
1 cup Vegan Mayonnaise
1 tbsp Lime juice
1 1/2 tsp Chili Powder, Chipotle
3/4 tsp Chili Powder
1/2 tsp Paprika, ground
1/4 tsp Salt, Kosher
12.0 each Hoagie Roll, sliced, toasted
5 cups Arugula, fresh
3/4 cup Pickled Red onion
Preparation
- For BBQ Tofu: In a medium mixing bowl, combine BBQ sauce, canola oil, soy sauce, 1 tbsp paprika, 2 tsp chili powder, garlic powder, onion powder, and black pepper and whisk well.
- Heat oven to 400°F. Coat each side of tofu with sauce and place on parchment lined sheet pan about 1 inch apart. Reserve any extra sauce. Bake for 20 minutes.
- Flip and brush tofu with remaining sauce. Bake for another 10 minutes or until cooked through. Tofu can be held in covered hotel pans in hot box or hot well until ready for service.
- For Chipotle Sauce: In a medium mixing bowl, combine vegan mayo, water, lime juice, chipotle chili powder, 3/4 tsp chili powder, 1/2 tsp paprika, and salt and whisk well. Chipotle sauce can be stored in sealed container in cooler until ready for service.
- For Service: Spread 1tablespoon chipotle sauce on top and bottom of bun, portion 1/4 ounce arugula on bottom bun, top with two tofu triangles, then 1/2 ounce red onion. Cover sandwich with top bun.
