Ingredients

1/4 cup Oil, Canola
3 cups Onions, Yellow, small dice
3 tbsp Garlic, cloves, peeled, minced
3 tbsp Tomato Paste, canned
6 tbsp Seasoning, Taco
5 cups Mushrooms, White Button, chopped
6 cups Beans, Lentils, cooked
1 1/2 tsp Salt, Kosher
1 tsp Pepper, Black, table grind
1 1/4 cups Vegan Mayonnaise
3 tsp Limes, juice
1 1/2 tsp Seasoning, Taco
1 tsp Garlic, powder
1/2 tsp Salt, Kosher
6 cups Cabbage, Coleslaw Mix
1 1/4 cups Onions, Red, sliced
1 1/2 cups Corn, whole kernels, canned
3/4 cup Cilantro, fresh, chopped
3/4 cup Guacamole, premade
12.0 each Tortilla, Flour, 10″

Preparation

  1. For Lentil Crumble: On a flat top grill heat oil over medium-high heat. Add onions and cook for 3-5 minutes. Add garlic and cook for 1 minute. Add tomato paste and 6 tbsp taco seasoning and cook for 2-3 minutes or until tomato paste starts to caramelize.
  2. Add mushrooms and cook for 3-5 minutes until moisture releases. Add lentils, 1 1/2 tsp salt and black pepper and cook for 10 minutes until thickened. Hold hot for service.
  3. For Coleslaw Dressing: In a small mixing bowl, combine vegan mayo, lime juice, 1 1/2 tsp taco seasoning, garlic powder, 1/2 tsp salt, and 3 tbsp water. Place dressing in cooler for later use.
  4. For Coleslaw: In a large bowl, combine cabbage, red onion, corn, and cilantro. Add dressing and toss to coat.
  5. To assemble: Spread 1 ounce of guacamole on tortilla. Add 3 ounces of coleslaw mix, and top with 6 ounces of crumble. Roll wrap ensuring sides are tucked-in.
  6. On a flat top, heat wrap for 1 minute or until wrap has sealed. Slice on a bias and serve.
