Everything But the Bagel Scones

Ingredients
3 cups all-purpose flour
¼ cup + 4 teaspoons (separated) seasoning mix, everything bagel
¼ cup sugar, white, granulated
2 tablespoons baking powder
½ cup non-dairy butter, cubed and chilled
1 ¾ cup + 1 1/3 tablespoon (separated) non-dairy cream, heavy
Preparation
- 1. For Scone Dough: In the bowl of a stand mixer, combine all-purpose flour, everything bagel seasoning mix, sugar and baking powder.
2. Using a paddle attachment, cut butter into dry ingredients until the mixture resembles corn meal.
3. Add 1 ¾ cups cream to dry mixture, using a dough hook attachment. Combine until dough is shaggy and has some dry spots.
4. Turn mixture onto to table and finish dough by gently folding repeatedly until dough looks uniform. Do not over mix.
5. Roll out dough to 1 inch thick, cut with a 2 ½ inch biscuit cutter. To re-roll leftover pieces, layer all scraps and then repeat process.
6. Preheat oven to 375°F. Add scones to a parchment lined sheet pan, brush with 1 1/3 tablespoon cream and sprinkle with 4 teaspoons everything seasoning. Bake for 20-25 minutes, rotating halfway through baking, until golden brown.
