Ingredients
French Toast
6 cups vanilla soy milk
1 1/2 cups cornstarch
1 1/2 cups fresh bananas, mashed
3/4 cup maple syrup
1/4 cup ground cinnamon
1/4 cup nutritional yeast
36 slices sourdough bread, sliced 1″ thick
1 cup non-dairy butter
Fruit compote
3 cups fresh strawberries, sliced
3 Tbsp. white sugar
1 Tbsp. ground cinnamon
1 tsp. vanilla extract
Preparation
- For French Toast: In a large bowl, combine soy milk, cornstarch, bananas, maple syrup, cinnamon, and nutritional yeast, and whisk until smooth.
- Soak slices of sourdough in custard mix for 3-4 minutes. On a flat top grill or large saute pan, melt butter over medium heat. Add soaked sourdough and cook 5 minutes on both sides until golden brown. French toast can be held hot in hotel pans until ready for service.
- For fruit compote*: In a pot over medium-low heat, combine strawberries, sugar, cinnamon, and vanilla extract. Cook 20 minutes, stirring occasionally until thickened. Store in a sealed container in a cooler until service.
- For service: Portion 3 slices of French toast on a plate and top with 1/4 cup of fruit compote. Serve with maple syrup and additional toppings of choice.
*Fruit compote can be made with any fruit of choice.
