Spicy Noodle Stir Fry With Korean Tempeh

Ingredients

8 1/4 cups Tempeh, Plain
1/2 cup Sauce, Gochujang
1/4 cup + 2 tbsp Oil, Sesame
3/4 cup + 2 tbsp Sugar, White, granulated
1 tbsp Vinegar, Rice Wine
1 cup Soy Sauce, regular
8 cups Pasta, Spaghetti, cooked
2 tbsp Oil, Canola
4 cups Onions, Yellow, sliced
2 tbsp Garlic, cloves, peeled, minced
7 1/2 cups Peas, Snap, whole, trimmed
3 1/2 cups Carrots, peeled, shredded
12 cups Spinach, Baby, stemmed, bagged
1 tsp Salt, Kosher
2 tsp Oil, Sesame

Preparation

  1. To make Spicy Gochujang Tempeh Triangles – Preheat oven to 400 degrees F. Cut tempeh into 1 ounce triangles.
  2. Whisk together the Gochujang sauce, 1/4 cup sesame oil, 3/4 cup sugar, rice wine vinegar, and 1/2 cup soy sauce together in a bowl. Coat tempeh in sauce and then place on a parchment lined sheet pan. Bake for 10 minutes, then flip and bake for another 10 minutes or until well roasted. Remove from oven. If needed and while still hot, remove any excess marinade that charred in oven away from the tempeh. Keep hot for service.
  3. To make Noodle Sauce – In a pot over medium high heat add 1/2 cup soy sauce, 2 tbsp sesame oil, and 2 tbsp sugar and whisk until sugar dissolves. Remove from heat.
  4. Pour sauce over cooked spaghetti and toss together. Hold hot for service.
  5. To make Vegetable Mix – Heat canola oil in a large skillet or flat top grill over medium high heat. Add onions and sauté for 3 minutes or until softened. Add garlic, snap peas, carrots, spinach, salt, and 2 tsp sesame oil and cook until spinach has wilted and vegetables are tender. Hold hot for service.
  6. To serve – Place 4 ounces of noodles into a bowl. Add 4 ounces of vegetable mixture. Shingle tempeh across the top and serve.
