Ingredients

Cookie dough

  • 3/4 cup Peanut butter, smooth
  • 1/2 cup Non-dairy butter, unsalted
  • 1/2 cup Sugar, white, granulated
  • 1/2 cup Sugar, brown
  • 3 tablespoons Non-dairy milk, soy, unsweetened
  • 2 tablespoons Applesauce
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups Flour, all-purpose
  • 3/4 teaspoon Baking soda
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Salt, Kosher

For baking

  • 1/4 cup Sugar, white, granulated

Ganache

  • 3 tablespoons Cream, coconut, sweetened, canned
  • 1/4 cup Vegan chocolate chips, 1M count

Instructions

For cookie dough

  • Using a stand mixer with a paddle attachment, add peanut butter, non-dairy butter, and sugars. Cream until combined.
  • Add ingredients non-dairy milk, applesauce and vanilla extract to creamed ingredients in mixer and beat until smooth.
  • Add flour, baking soda, baking powder, and salt to ingredients in mixer and beat until fully combined and dough is formed

For baking

  • Preheat oven to 350°F. Using #24 red scoop, portion cookie dough into balls. In a mixing bowl, add sugar and roll each cookie dough ball in it to coat. Set each ball on a lined sheet pan one inch apart.
  • Bake in oven for 11-13 minutes until golden brown. Cool 3 minutes and then press a small hole in the center of each cookie while still slightly warm. Cool completely.

For ganache

  • Over low heat, portion coconut cream in a pan and heat until scalding but not boiling. *Can also heat cream in a microwave using a microwave safe bowl. In a mixing bowl, pour heated cream over chocolate and stir until chocolate is melted and ganache is smooth. Store in a sealed container in cooler until ready for use and pull 20-30 minutes before use to soften.

For service

  • Using a spoon or piping bag fill holes in cookies with 1 1/2 teaspoons of ganache. Transfer to serving trays or storage container.
