Ingredients

For cornbread

  • 3 cups Flour, Whole Wheat
  • 2 1/2 cups Cornmeal Yellow, fine, whole-grain
  • 1 cup Sugar, White, granulated
  • 1/4 cup Baking powder
  • 1 1/2 teaspoons Salt, Kosher
  • 3 1/2 cups Non-dairy Milk, Soy, unsweetened
  • 3/4 cup Applesauce, unsweetened
  • 1/2 cup Oil, canola

Instructions

For cornbread batter

  • Combine flour, cornmeal, sugar, baking powder and salt in a stand mixer with a paddle attachment and mix for 1 minute on low speed to combine.
  • Combine soy milk, applesauce and oil in a bowl and stir to combine. Add to dry ingredients and mix on medium speed for 2-3 minutes, until just combined. Do not over mix.

For baking

  • Preheat oven to 400°F. Pour batter into oiled half sheet pan or use yellow #20 scoop to portion into muffin pans. Bake 25-30 minutes until lightly browned. Cool 10 minutes.

For service

  • Cut each half sheet pan into 50 pieces (5X10). Each small piece will be about 2 inches x 2 1/2 inches.

Notes

Each piece of cornbread provides 1 ounce equivalent grain.
