General Tso’s tofu

Ingredients

For General Tso's tofu

  • 1 2/3 cups Sauce, General Tso
  • 6 1/3 cups Tofu, Extra Firm, drained, pressed, cubed
  • 3 tablespoons Oil, Canola
  • 1/3 cup Cornstarch
  • 1 1/2 cups Onions, Green, sliced thinly on bias

For broccoli

  • 6 3/4 cups Broccoli, fresh, florets
  • 1/4 cup Oil, Canola
  • 1 teaspoon Salt, Kosher
  • 1 teaspoon Pepper, Black, ground

For service

  • 12 1/4 cups Rice, Brown, long grain, cooked

Instructions

For General Tso's tofu

  • Preheat oven to 400°F. In a pot over medium heat bring sauce to a boil then remove and hold hot for tofu.
  • In a large mixing bowl combine tofu and oil, coating tofu on all sides. Add cornstarch and toss to coat tofu. Spread on parchment lined sheet pans in a single layer. Bake in oven for 15 minutes then rotate pan and using a spatula flip tofu to other side. Bake for another 15 minutes or until tofu is a deep golden brown and crispy.
  • Remove tofu from oven and place into hotel pan. Add sauce and coat thoroughly. Top with green onions. Hold hot for service.

For broccoli

  • Preheat oven to 450°F. In a large mixing bowl, toss broccoli in oil and spices and mix well. Spread on parchment lined sheet pans. Bake in oven for 10-12 minutes or until slightly charred on the outside. Remove from oven and hold hot for service.

For service

  • In a bowl add 7 ounces of rice at bottom, 3 ounces of broccoli and 4.4 ounces of tofu on top.

2oz Meat Alternative, 2oz Grain Equivalent, 1/2 cup Dark Green Vegetable.
