Ingredients
For curry chickpeas
- 6 cups Beans, Garbanzo, canned, low sodium
- 3 cups Hummus, premade
- 2 cups Apples, Granny Smith, peeled, cored, medium dice
- 1 1/2 cups Carrots, peeled, shredded
- 1 cup Raisins
- 1 cup Celery, small dice
- 1/4 cup Lemons, juice
- 2 tablespoons Curry Powder, mild
- 2 teaspoons Garlic, powder
- 1 1/4 teaspoons Salt, Kosher
- 1/2 teaspoon Cumin, ground
For service
- 24 each Bread, Whole Wheat, slice
Instructions
For curry chickpeas
- Lightly mash chickpeas in a food processor or by hand.
- In a large mixing bowl, combine mashed chickpeas with hummus, apples, carrots, raisins, celery, lemon juice, and spices, mix to combine.
For service
- Portion 1 cup curry chickpeas onto whole grain bread or bun. Slice in half if desired.
