Ingredients
For meatballs
- 36 each Vegan Meatballs
For rosa sauce
- 2 1/2 cups Sauce, Marinara, low sodium, canned
- 1 1/4 cups Tofu, Extra Firm
- 1 cup Tomatoes, Cherry, small
- 1/3 cup Water, hot
- 1 tablespoon Seasoning, Italian
- 1 tablespoon Garlic, cloves, peeled, chopped
- 1 teaspoon Onion, powder
For service
- 12 cups Pasta, Spaghetti, Whole Wheat, cooked
Instructions
For meatballs
- Prepare meatballs according to package instructions.
For rosa sauce
- In blender, combine marinara sauce, tofu, tomatoes, water and spices. Blend until smooth.
- In a sauce pan, simmer rosa sauce over low heat.Alternatively: Put sauce in hotel pan and heat in steamer.
- Hold hot for service, stirring occasionally.
For service
- Portion 1 cup hot pasta onto a plate and top with 1/2 cup rosa sauce and 3 meatballs.
Notes
Each serving provides 2 oz eq meat/meat alternate, 2 oz eq grains, and ¼ cup red/orange vegetable.
