Ingredients

For hoagie filling

  • 3 tablespoons Oil, Canola
  • 4 cups Mushrooms, Cremini, sliced
  • 1 1/2 cups Onions, White, medium dice
  • 2 teaspoons Garlic, granulated
  • 1 teaspoon Salt, Kosher
  • 1 teaspoon Pepper, Black, table grind
  • 6 cups Vegan Meat, crumbles
  • 1 1/2 cups Pepper, Bell, Green, medium dice
  • 2 tablespoons Soy Sauce, low-sodium

For nacho cheez

  • 3 cups Nacho Cheez

For service

  • 12 each Bread, Hoagie Roll, whole wheat, sliced

Instructions

For hoagie filling

  • Heat oil in large sauté pan over medium-high heat. Add mushrooms and cook for 2-3 minutes.
  • Add all onions and spices to pan and sauté for 2-3 minutes or until onions are softened and translucent.
  • Add meat crumbles, bell peppers and soy sauce to pan and cook for 5-8 minutes or until crumbles are browned and cooked through.

For nacho cheez

  • Prepare recipe according to directions. Combine nacho cheez with mushroom mixture and hold hot for service.

For service

  • Portion 1 cup of mixture into hoagie bun.

Notes

Each serving provides 2 oz eq meat/meat alternate, 2 oz eq grains, and ¼ cup other vegetable.
