Ingredients
For baked pita chips
- 3 each Pita bread, 8", cut into 1×1 inch squares
- 3 tablespoons Oil, Olive
- 1 1/2 teaspoons Seasoning. Italian
For seasoned chickpeas
- 3 cups Beans, Garbanzo, canned, low sodium, drained, rinsed
- 3 tablespoons Oil, Olive
- 1 1/2 teaspoons Paprika, ground
- 3/4 teaspoon Cumin, ground
- 3/4 teaspoon Garlic, granulated
- 3/4 teaspoon Salt, Kosher
For yogurt sauce
- 6 cups Vegan Yogurt, Soy, plain
- 4 tablespoons Lemons, juice
- 3 tablespoons Sunflower Butter, unsalted
- 2 1/4 teaspoons Garlic, cloves, peeled, minced, dried
- 1 1/2 teaspoons Salt, Kosher
For (optional) dried parsley oil
- 3 tablespoons Oil, Olive
- 1 tablespoon Parsley Flakes, dried, whole flakes
- 1 tablespoon Vinegar, Distilled White
For service (optional)
- 1 tablespoon Paprika, ground
Instructions
For baked pita chips
- Preheat oven to 350°F. In a large mixing bowl, toss pita chips with oil and seasoning until combined. Transfer pita bread to a lined baking sheet and bake for 20 minutes flipping halfway. Remove from oven and reserve until service.
- *Optional, use 2 ounce of premade pita chips per serving.
For seasoned chickpeas
- In a mixing bowl, combine chickpeas, oil and spices until chickpeas are evenly coated. Transfer to a lined baking sheet and bake for 20-25 minutes, or until golden-brown, flipping halfway. Remove from oven and reserve until service.
For yogurt sauce
- In a large mixing bowl, combined yogurt, lemon juice, sunflower butter, garlic and salt. Whisk until ingredients are incorporated. Reserve in cooler until service.
For (optional) dried parsley oil
- In a small mixing bowl, whisk oil, parsley and vinegar to combine. Set aside for service.
For service
- In a bowl, add 1/2 cup of yogurt sauce, followed by 1/4 cup of chickpeas. Top with 1 ounce of pita chips. Drizzle 2 teaspoons of parsley oil and dust with a sprinkle of paprika.
Notes
Each dish provides 2 meat/meat alternates and 2 ounce equivalent grains.
