
Al Pastor Loaded Fries

Ingredients
- 21 cups French fries, curly cut, frozen
- 1 1/2 cups Orange juice
- 1/4 cup Chipotle peppers in adobo sauce
- 6 tablespoons Apple cider vinegar
- 1 tablespoon Ground cumin
- 1 tablespoon Oregano, dried, whole leaves
- 3 tablespoons Canola oil
- 12 1/3 cups Vegan meat crumbles
- 3 cups Nacho cheez (see recipe below)
- 1 1/2 cups Pineapple tidbits, canned, in juice, drained
Nacho cheez
- 6 1/2 cups Potatoes, peeled, medium dice
- 6 cups Carrots, peeled, medium dice
- 1/2 cup Canola oil
- 7 tablespoons Water (reserved cooking liquid)
- 5 teaspoons Lemon juice
- 1 1/2 teaspoons Salt
- 1 1/2 teaspoons Onion powder
- 1 1/2 teaspoons Garlic powder
- 6 tablespoons Nutritional yeast
- 1 tablespoon Cayenne pepper
Instructions
- Prepare frozen curly fries according to package instructions.
- Combine orange juice, peppers, sugar, vinegar, cumin and oregano in a blender and blend until smooth.
- To a large sauté pan on medium-high heat add oil and vegan meat crumbles. Sauté crumbles for 3-5 minutes or until lightly browned. Add reserved al pastor sauce and cook until fully incorporated and browned. Hold hot for service.
Nacho cheez
- In a large pot, add potatoes and carrots and fill to cover with at least 2 inches of water (unlisted). Boil for 20 minutes or until tender. Drain and reserve cooking liquid.
- In batches, using a Robot Coup, large food processor, or blender, add potatoes, carrots, and all remaining ingredients. Process mixture until smooth. If too thick add more reserved cooking liquid to mixture 2 Tablespoons at a time to thin it out. Hold hot for service.
For service
- Portion 1 3/4 cup curly fries topped with 1/2 cup al pastor meat crumbles, 1/4 cup nacho cheez sauce, and 2 tablespoons pineapple tidbits.
Notes
Crediting: Each serving provides 2 oz eq meat/meat alternate and 1 cup starchy vegetable.
